Feeling Fallish

Autumn has arrived and as I mentioned in a previous post, we got ourselves some sweet pumpkins. The kids had a crazy good time painting them on a lazy Sunday afternoon. Observe:
Good parenting at work: Noah puts Alex in his finest Church shirt for painting.
After picking our tree of its apples, we were left wondering what one does with 500 lbs of apples. Here's what we've come up with so far: 1. make apple pies 2. make apple juice 3. give them away 4. look at them in our carport while thinking "Holy %$#@ that's a lot of apples" 5. desperately search on allrecipes.com for new ways to cook with apples (apple pancakes with cinnamon syrup pictured below).
Any more suggestions?

I have an awesome recipe for pork chops with green apples. What kind of apples are these?

I have no idea--a good sweet kind though. They look like Fuji apples, but they taste different.

We have a TON of pears as well. I have been busy canning them. It doesn't hurt to have some food storage. Though, finding jars right now is not easy. I am lucky that my parents have a ton of them.
